Ingredients

  • 1.5 lbs alligator tail meat, cut into 1.5-inch chunks
  • ¾ cup cornmeal
  • ¼ cup all-purpose flour
  • 2 tbsp cajun seasoning blend (paprika, cayenne, garlic, thyme)
  • ½ cup hot sauce (Louisiana-style)
  • ¾ cup buttermilk
  • 2 cups neutral cooking oil

Instructions

    Pat alligator chunks dry with paper towels. Season inside and out with salt and black pepper.

    Mix cornmeal, flour, and cajun seasoning in a shallow bowl. Pour buttermilk into another bowl.

    Dip each alligator chunk in buttermilk, then dredge in the cornmeal mixture, pressing to coat all sides.

    Heat oil in a heavy skillet over medium-high until it shimmers and a pinch of cornmeal sizzles immediately.
