Ingredients
- ¾ cup all-purpose flour
- 2 whole eggs
- 1 cup whole milk
- 2 medium, sliced thin yellow onions
- ¾ cup Gruyère cheese, grated
- 4 tbsp, divided butter
- ½ tsp granulated sugar
- 2 sprigs fresh thyme

Whisk flour, eggs, milk, and a pinch of salt until smooth. Let rest 5 minutes while you prep the onions.

Melt 2 tbsp butter in a large skillet over medium. Add onions, sugar, and thyme. Stir often until deep golden, ~10 minutes.

Transfer onions to a plate. Wipe skillet clean with paper towel and return to medium heat.

Melt remaining 2 tbsp butter in the skillet. Pour in 1/4 cup batter, tilting immediately to spread thin as a crêpe, ~30 seconds.

When edges look set and bottom is pale golden, flip. Top with a handful of Gruyère and caramelized onions, then fold into quarters.

Cook 60 more seconds until cheese melts. Transfer to a plate. Repeat with remaining batter. Serve hot.
