Ingredients

  • 6 oz ground breakfast sausage
  • 2 cups frozen shredded hash browns
  • 1 can (15 oz) canned black beans, drained and rinsed
  • 1 whole lime (juiced, plus wedges for serving)
  • ¼ cup fresh cilantro, chopped
  • 2 whole eggs

Instructions

    Heat oil in a 12-inch skillet over medium-high. Add sausage and break it up with a spoon, cooking until no pink remains, ~5 minutes.

    Push sausage to the side. Add hash browns to the empty space and press flat; let them crisp for 4 minutes without stirring.

    Stir hash browns and sausage together, breaking up any clumps. Cook another 2 minutes until hash browns are golden.

    Add black beans and lime juice to the skillet. Toss everything together and warm for 1 minute; sprinkle with cilantro.

    Make two small wells in the mixture. Crack an egg into each well and cover the skillet; cook until whites set, ~3 minutes.

    Serve with lime wedges and hot sauce on the side.
