Ingredients

  • 12 oz boudin sausage
  • 8 pieces wonton wrappers
  • 3 tbsp mayonnaise
  • 1 tbsp creole mustard or spicy brown mustard
  • ½ tsp hot sauce (like Crystal or Frank's)

Instructions

    Remove casing from boudin and squeeze filling into a bowl. Divide into 8 portions.

    Place 1 portion of boudin in the center of a wonton wrapper, then fold corners to seal into a tight packet.

    Spray egg rolls lightly with cooking oil on all sides, then air-fry at 380°F for 8 minutes until golden and crispy.

    While egg rolls fry, stir mayo, mustard, and hot sauce together in a small bowl until smooth.
