Ingredients
- 1 lb ground beef
- 8 count corn tortillas
- 1 cup shredded cheddar or cotija cheese
- ½ cup jalapeños, sliced
- ½ cup sour cream
- 1 count lime
- ¼ cup fresh cilantro, chopped

Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Fry tortillas one at a time until golden and crispy, 30 seconds per side. Transfer to a paper towel.

Add ground beef to the same skillet, breaking it up with a spoon, until no pink remains, about 5 minutes.
