Ingredients

  • ½ lb ground beef
  • 2 tbsp taco seasoning
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ¾ cup sharp cheddar cheese, shredded
  • 2 whole flour tortillas (6-inch)
  • ½ whole lime
  • 2 tbsp olive oil

Instructions

    Heat 1 tbsp oil in a 10-inch skillet over medium-high until shimmering, about 1 minute.

    Slice each tortilla into thin strips. Working in batches, fry in hot oil until golden and crisp, 2–3 minutes.

    Transfer tortilla strips to a paper towel; season with salt.

    Add 1 tbsp oil to the same skillet over medium-high heat.

    Brown ground beef, breaking it apart with a spoon, until no pink remains, about 5 minutes.

    Stir in taco seasoning and 2 tbsp water. Simmer until the sauce coats the meat, 1–2 minutes.

    Toss lettuce and tomatoes together in a large bowl. Divide between two plates.

    Top each salad with seasoned beef and cheese. Pile tortilla strips on top.

    Squeeze lime over the top and serve immediately.
