Ingredients

  • ¾ lb ground beef
  • 2 tbsp taco seasoning
  • 2 whole flour tortillas (6-inch)
  • 4 cups romaine lettuce, chopped
  • ¾ cup cheddar cheese, shredded
  • 1 cup cherry tomatoes, halved
  • ¼ cup sour cream
  • ½ cup salsa

Instructions

  1. 1

Heat 1 tbsp oil in a skillet over medium-high. Add tortillas one at a time and fry 30 seconds per side until golden and crispy.

  2. 2

Immediately drape each tortilla over an oven-safe bowl to form a shell. Let cool 2 minutes, then carefully remove.

  3. 3

Add beef to the same skillet. Cook over medium-high, breaking up with a spoon, until no pink remains, ~6 minutes.

  4. 4

Stir in taco seasoning and 2 tbsp water. Simmer 1 minute until sauce coats the beef.

  5. 5

Place one tortilla shell on each plate. Layer lettuce inside, then top with seasoned beef.

  6. 6

Scatter cheese and tomatoes over beef. Drizzle with salsa and dollop with sour cream.
