Ingredients
- ¾ lb ground beef
- 2 tbsp taco seasoning
- 4 cups romaine lettuce, chopped
- ½ cup cheddar cheese, shredded
- 1 cup cherry tomatoes, halved
- ¼ cup sour cream
- ½ whole lime (juiced)

Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Add ground beef and cook, breaking apart with a spoon, until browned and no pink remains, 5–6 minutes.

Sprinkle taco seasoning over the beef. Add 3 tbsp water and stir until the sauce coats the meat, 1 minute.

Transfer seasoned beef to a plate. Let cool slightly, about 2 minutes.

Divide romaine between two bowls. Top each with half the beef, cheese, and tomatoes.

Whisk sour cream with lime juice and a pinch of salt. Drizzle over each salad and serve immediately.
