Ingredients

  • 1 lb ground beef
  • 1 packet (or 2 tbsp homemade) taco seasoning
  • 6 cups romaine lettuce, chopped
  • 2 medium plum tomatoes, diced
  • 1 cup sharp cheddar cheese, shredded
  • 2 cups tortilla chips
  • 1 whole lime (juiced)
  • ½ cup sour cream

Instructions

  1. 1

Brown ground beef in a skillet over medium-high heat, breaking it up with a spoon, until no pink remains, ~6 minutes.

  2. 2

Stir in taco seasoning and 1/4 cup water. Simmer for 2 minutes until the sauce thickens and coats the meat.

  3. 3

Divide lettuce among four bowls. Top each with diced tomato, cheese, and tortilla chips.

  4. 4

Spoon warm beef over each salad. Whisk lime juice and sour cream together, then drizzle over the top.
