Ingredients

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1.5 cups tortilla strips (fried or baked)
  • 6 cups romaine lettuce, chopped
  • 1.5 cups cherry tomatoes, halved
  • 1 whole lime (juiced)
  • 3 tbsp olive oil

Instructions

    Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add ground beef and cook, breaking apart with a spoon, until no pink remains, ~6 minutes.

    Sprinkle taco seasoning over beef and stir to coat evenly. Remove from heat.

    Combine romaine and tomatoes in a large bowl. Squeeze lime juice over top.

    Add warm beef and tortilla strips to the salad. Toss to combine.

    Divide among plates or bowls. Serve immediately while beef is warm.
