Ingredients
- ¾ lb beef sirloin or ribeye, sliced thin against the grain
- 8 cloves garlic cloves, sliced thin
- 3 tbsp soy sauce
- 1 tbsp white vinegar
- 3 tbsp neutral oil
- ¼ cup fresh cilantro and scallion, chopped

Heat 1 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Add garlic slices and cook, stirring constantly, until golden and crispy, 2–3 minutes. Transfer to a plate.

Add remaining 2 tbsp oil to the skillet and increase heat to high. Working in two batches, sear beef 90 seconds per side without stirring — edges should brown deeply.

Return all beef to the skillet. Add soy sauce and vinegar, toss for 30 seconds until the surface glistens.

Top with crispy garlic, cilantro, and scallion. Serve immediately over rice or with lettuce wraps.
