Crispy Beef Flautas

Ingredients
- ½ lb ground beef
- 4 count flour tortillas (8-inch)
- ¾ cup shredded cheddar cheese
- ¼ cup sour cream
- ½ tsp salt
- ¼ tsp pepper

Add the ground beef to a large skillet and place it on the stove over medium-high heat. Use a wooden spoon to break the beef into pea-sized crumbles as it cooks, stirring every 15 seconds.

When the beef is no longer pink inside (about 5 minutes), add 0.5 tsp salt and 0.25 tsp pepper. Stir for 10 seconds until evenly distributed. Transfer the beef to a small bowl.

Wipe the skillet clean with a paper towel. Add 2 tablespoons of neutral oil and place it back on the stove over medium-high heat. Wait about 90 seconds until the oil shimmers and slides quickly when you tilt the pan.

Place one tortilla flat on your work surface. Spoon about 2 tablespoons of cooked beef and 2 tablespoons of shredded cheese down the center of the tortilla in a horizontal line, leaving 2 inches of space on each end.

Roll the tortilla tightly from one long side toward the other, like rolling a burrito, with the seam facing down. Place the rolled flauta seam-side down on a clean plate. Repeat with the remaining three tortillas.

Carefully lay the first flauta seam-side down into the hot oil. You should hear an immediate sizzle. Fry for 90 seconds, then use tongs to flip it over and fry the other side for another 90 seconds until both sides are the color of caramel and feel crispy to the touch.

Slide the cooked flauta onto a paper towel-lined plate using a slotted spoon. Repeat the frying process with the remaining three flautas, one at a time, frying each for 90 seconds per side.

Arrange the four flautas on a serving plate. Drizzle 2 tablespoons of sour cream across the tops of all four flautas.
