Ingredients
- 2 cups leftover cooked rice, broken into individual grains
- ¾ lb beef sirloin or flank steak, sliced thin against the grain
- 1 medium yellow onion, cut into 1-inch wedges
- 2 tbsp fish sauce
- 1 whole lime (juiced)
- 2 stalks scallion, sliced thin

Heat 2 tbsp oil in a 12-inch skillet over high heat until shimmering, about 90 seconds.

Spread rice in an even layer and press gently. Cook without stirring for 3–4 minutes until golden and crispy on the bottom.

Push rice to the side. Add beef and onion to the empty space, sear until beef is browned and onions are charred, ~4 minutes.

Toss everything together. Drizzle fish sauce and lime juice over top, toss again until the pan smells aromatic and fragrant.
