Ingredients

  • 2 cups leftover cooked rice, broken into individual grains
  • ¾ lb beef sirloin or flank steak, sliced thin against the grain
  • 1 medium yellow onion, cut into 1-inch wedges
  • 2 tbsp fish sauce
  • 1 whole lime (juiced)
  • 2 stalks scallion, sliced thin

Instructions

  1. 1

Heat 2 tbsp oil in a 12-inch skillet over high heat until shimmering, about 90 seconds.

  2. 2

Spread rice in an even layer and press gently. Cook without stirring for 3–4 minutes until golden and crispy on the bottom.

  3. 3

Push rice to the side. Add beef and onion to the empty space, sear until beef is browned and onions are charred, ~4 minutes.

  4. 4

Toss everything together. Drizzle fish sauce and lime juice over top, toss again until the pan smells aromatic and fragrant.

  5. 5

Divide between bowls and top with sliced scallion. Serve hot.
