Ingredients

  • 1 cup masa harina
  • ¾ cup warm water
  • ¾ cup refried beans
  • ¾ cup shredded cheese (Oaxaca, mozzarella, or cheddar)
  • ¾ cup salsa (fresh or jarred)
  • ¼ cup sour cream

Instructions

    Mix masa harina and warm water until a soft, pliable dough forms. Rest 5 minutes uncovered.

    Divide dough into 4 balls. Flatten each ball into a 3-inch disk between two pieces of plastic wrap.

    Spoon 2 tbsp beans and 2 tbsp cheese onto the center of each disk. Fold dough in half and press edges firmly to seal.

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 1 minute.

    Pan-fry gorditas 3 minutes per side until golden brown and crispy, working in batches if needed.
