Crispy Bakwan Sayur

Ingredients

  • 1 cup chickpea flour (besan)
  • 1.5 cups zucchini, grated
  • 1 cup carrot, grated
  • 3 stalks scallions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ½ lime lime (juiced)
  • 1 chili Thai chili, minced (or 0.25 tsp chili flakes)

Instructions

    Mix chickpea flour, grated zucchini and carrot, scallions, garlic, and ginger in a bowl. Add salt, pepper, and 0.5 cup water until batter is thick but pourable.

    Heat 2 inches oil in a heavy skillet to 350°F, or until a drop of batter sizzles immediately on contact.

    Drop 2-tbsp spoonfuls of batter into oil in batches — don't crowd the pan. Fry 2–3 minutes per side until golden brown and crispy.

    Transfer fritters to a paper-towel-lined plate. Repeat with remaining batter.

    Whisk lime juice, minced chili, 1 tbsp soy sauce, and 2 tbsp water in a small bowl to make a dipping sauce.

    Serve fritters hot with chili-lime dipping sauce on the side.
