  • 2 whole sweet potatoes, medium
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

    Line a sheet pan with parchment paper so the fries won't stick to the metal.

    Rinse each sweet potato under cold water and scrub the skin with your fingers to remove any dirt.

    Place one sweet potato on a cutting board and slice it lengthwise (from one pointed end to the other) into thin wedges about the thickness of a pencil, like cutting a pizza into slices.

    Repeat with the second sweet potato until you have about 16 wedges total.

    Pour the olive oil into a medium bowl, add the salt and black pepper, and stir with a spoon until mixed.

    Add all the sweet potato wedges to the bowl and toss them with your hands or two spoons until every piece is lightly coated with oil and seasoning.

    Spread the coated wedges in a single layer across the parchment-lined sheet pan, leaving a little space between each piece so they bake evenly.

    Slide the sheet pan into the preheated 425°F oven and set a timer for 15 minutes.
