Ingredients
- 6 oz bacon, sliced
- 1 medium, sliced yellow onion
- 8 large eggs
- ½ cup heavy cream
- ¾ cup gruyère cheese, shredded
- 1 pinch salt and black pepper to taste

Cook bacon in a 10-inch cast iron skillet over medium-high until crispy, about 6 minutes. Transfer to a paper towel.

Pour off all but 1 tbsp bacon fat. Add onion and cook, stirring occasionally, until golden and softened, about 4 minutes.

Whisk eggs with cream, salt, and pepper in a bowl until smooth. Crumble in bacon and stir gently.

Pour egg mixture into the skillet. Scatter gruyère on top and let it set over medium heat for 2 minutes.

Transfer skillet to a 400°F oven and bake until edges are set but center still jiggles slightly, about 6 minutes.
