Ingredients

  • 4 slices bacon slices
  • 1 whole avocado
  • 2 slices bread
  • 2 large eggs
  • 2 tbsp butter
  • 1 pinch salt and pepper

Instructions

    Cook bacon in a skillet over medium-high heat until crispy, 5–6 minutes. Transfer to a paper towel.

    Toast bread until golden and crisp, 2–3 minutes per side, then butter generously.

    Cut avocado in half, scoop into a bowl, and mash with a fork until chunky-smooth.

    Add more butter to the skillet, then crack both eggs in. Fry over medium-low until whites set but yolks jiggle, 4–5 minutes.

    Spread mashed avocado evenly on each toast slice. Season lightly with salt and pepper.
