Ingredients
- 4 slices bread (thick-cut sourdough or brioche)
- 2 whole ripe avocados
- 4 whole eggs
- 2 tbsp butter
- 3 tbsp honey
- ½ tsp red pepper flakes
- ½ whole lemon
- 1 pinch fleur de sel or sea salt

Heat a skillet over medium-high. Butter both sides of the bread, then toast until golden and crispy on each side, about 2 minutes per side.

Transfer toast to a plate. Cut avocados in half, remove the pit, and scoop flesh onto the toast. Smash with a fork, squeeze lemon over, and season with salt.

Add remaining butter to the skillet over medium heat. Crack eggs into the pan and fry until whites are set but yolks still jiggle, about 3 minutes.

Warm honey with red pepper flakes in a small bowl or over low heat for 30 seconds until fragrant and just warm.
