Ingredients
- ½ whole avocado, ripe
- 1 slice bread, crusty or sourdough
- 1 whole egg, large
- 1 tbsp butter
- ¼ tsp red pepper flakes

Toast the bread in a skillet over medium-high heat until golden and crispy on both sides, about 2 minutes per side.

Remove toast to a plate. Add 0.5 tbsp butter to the skillet, crack the egg into it, and cook until whites set but yolks jiggle.

Scoop avocado onto a small plate and mash with a fork until chunky-creamy, then season with salt and pepper.

Spread remaining butter on toast, top with mashed avocado, then slide the fried egg on top.

Sprinkle with red pepper flakes and a pinch of salt. Serve immediately.
