Ingredients

  • 1 can (15 oz) canned chickpeas, drained and patted dry
  • 3 tbsp amba (mango pickle), plus 2 tbsp liquid
  • ⅓ cup fresh parsley, chopped
  • 3 tbsp all-purpose flour
  • ½ tsp ground cumin
  • ½ cup hummus
  • 3 tbsp tahini

Instructions

  1. 1

Pulse chickpeas, amba (with liquid), parsley, and cumin in a food processor until chunky but cohesive.

  2. 2

Fold in flour by hand until the mixture holds together when squeezed, about 1 minute.

  3. 3

Roll into 8 balls. Spray with olive oil and air-fry at 380°F for 12 minutes, shaking halfway through.

  4. 4

Spread hummus on a plate. Top with hot falafel and drizzle tahini generously.

  5. 5

Squeeze fresh lemon over everything. Serve immediately with lemon wedges and extra parsley.
