Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs
- 2 tbsp butter
- ½ cup sour cream
- 4 tbsp caviar

In a blender, combine 1 cup flour, 1 cup milk, 2 eggs, and 1 tbsp melted butter. Blend until smooth, about 30 seconds. Let the batter rest for 5 minutes.

Heat a 9 inch nonstick skillet over medium heat and brush with a little of the remaining butter. Pour in 1/4 cup batter, swirling to coat the bottom. Cook until the edges lift and the bottom is golden, about 1 minute.

Flip the crepe and cook for another 30 seconds until lightly spotted. Transfer to a plate and repeat with the remaining batter, brushing the pan with butter as needed.

To serve, spread 1 tbsp sour cream over each crepe, then top with 1 tbsp caviar. Fold or roll the crepes and serve immediately.
