Ingredients
- 1 lb salmon fillet, skin removed
- 1 lb potatoes, diced small
- 4 cups fish or vegetable broth
- ¾ cup heavy cream
- ¼ cup fresh dill, chopped (divided)
- 1 medium leek, white and light green parts, sliced into rings
- 2 tbsp lemon juice

Bring broth to a boil in a large pot over medium-high heat.

Add potatoes and leek, simmer until potatoes are nearly tender, about 8 minutes.

Cut salmon into 1-inch cubes, add to pot, and gently simmer until opaque, 4-5 minutes.

Stir in cream, half the dill, salt, and pepper. Heat through but do not boil, 2 minutes.

Finish with lemon juice. Taste and adjust salt and pepper.

Serve hot, garnished with remaining fresh dill.
