Ingredients

  • 2 tbsp butter
  • 1 medium yellow onion, diced
  • 1.5 lb potatoes, peeled and cut into 1-inch chunks
  • 4 cups vegetable broth
  • 2 tbsp fresh dill (or parsley), chopped
  • 1 tbsp whole grain mustard

Instructions

    Melt butter in a large pot over medium heat. Add diced onion and cook until soft and translucent, about 3 minutes.

    Add potato chunks and vegetable broth. Bring to a boil, then reduce to medium and simmer until potatoes are very tender, about 6 minutes.

    Partially mash potatoes directly in the pot with the back of a spoon—leave some chunks for texture.

    Stir in mustard and fresh dill. Season with salt and pepper to taste.
