Ingredients

  • 3 tbsp butter
  • 12 oz cremini or button mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1.5 cups whole milk
  • ½ cup vegetable broth
  • 1 sprig fresh thyme (or 0.5 tsp dried)

Instructions

    Melt butter in a large skillet over medium-high heat until foamy, about 60 seconds.

    Add mushrooms and cook, stirring occasionally, until golden brown and liquid evaporates, ~5 minutes.

    Sprinkle flour over mushrooms and stir constantly for 60 seconds until it smells toasty.

    Pour in milk and broth slowly while whisking to avoid lumps. Add thyme and a pinch of salt.

    Simmer gently for 3 minutes, stirring often, until gravy thickens and coats the back of a spoon.
