  • ½ cup cottage cheese
  • ¾ cup diced ham
  • ¾ cup cherry tomatoes, halved
  • 1.5 tbsp butter
  • 1 pinch salt and black pepper

    Whisk eggs and cottage cheese together in a bowl until well blended and slightly thick.

    Melt butter in a 10-inch nonstick skillet over medium heat until it foams, about 1 minute.

    Add ham and tomatoes, cook until tomatoes soften and ham warms, stirring occasionally, 2 minutes.

    Pour in egg mixture, let it sit untouched for 20 seconds, then gently push it toward the center with a spatula.

    Continue stirring slowly every 15–20 seconds until curds form and eggs look creamy but set, 3–4 minutes total.
