Ingredients

  • 3 tbsp butter
  • 2 cups frozen diced potatoes
  • 1.25 lbs cod fillets, skin removed, cut into 1-inch chunks
  • 1 cup heavy cream
  • 2 cups chicken or seafood broth
  • 1 whole bay leaf

Instructions

    Melt butter in a large pot over medium heat until foaming, about 90 seconds.

    Add frozen potatoes and stir for 2 minutes until they start to soften.

    Pour in broth, add bay leaf, and bring to a simmer over medium-high heat, 3 minutes.

    Slide cod pieces into the pot and stir gently. Simmer 4 minutes until cod is opaque and flakes easily.

    Stir in heavy cream and season with salt and pepper to taste. Simmer 1 minute.

    Remove bay leaf and serve hot in bowls.
