Ingredients

  • 2 cups jasmine rice
  • 1 can (13.5 oz) coconut milk (full-fat canned)
  • ½ cup crispy fried shallots
  • 1 piece ginger (thumb-sized, minced)
  • 3 cloves garlic cloves (minced)
  • ¼ cup fresh cilantro or Thai basil
  • 1 lime lime (zested + juiced)

Instructions

    Rinse rice under cold water until water runs clear, about 1 minute.

    Heat 1 tbsp oil in a large skillet over medium heat, then add garlic and ginger.

    Cook until fragrant, about 30 seconds, then add rice and stir to coat.

    Pour in coconut milk and 1.5 cups water, add a pinch of salt, and bring to a boil.

    Cover, reduce heat to low, and simmer until rice is tender and liquid absorbs, ~12 min.

    Fluff with a fork, fold in lime zest and juice, then top with crispy shallots and herbs.
