Ingredients
- 1.5 lb chicken breast, cut into bite-sized pieces
- 1.5 cups rice (white or brown)
- 1 can (10.5 oz) cream of chicken soup
- 1.5 cups cheddar cheese, shredded
Instructions

Heat oil in a large skillet over medium-high. Add chicken pieces and cook, stirring often, until no pink remains, about 6 minutes.

Stir in rice, cream soup, and 1.5 cups water. Bring to a simmer, then cover and reduce heat to low.

Cook covered for 10 minutes, stirring once halfway through, until rice is tender and liquid is mostly absorbed.

Remove from heat. Stir in cheddar cheese until melted and creamy. Season with salt and pepper to taste.
