Ingredients

  • 1.5 lb chicken thighs, boneless and skinless
  • 1 cup sour cream
  • ½ cup chicken broth
  • 4 cloves garlic, minced
  • 1 whole lime
  • ½ whole jalapeño (optional), sliced

Instructions

    Heat olive oil in a large skillet over medium-high. Pat chicken dry, season with salt and pepper.

    Sear chicken 3 minutes per side until golden, then transfer to a plate.

    Add garlic and jalapeño to the skillet, cook 30 seconds until fragrant.

    Stir in broth, scraping up browned bits. Return chicken to the pan and simmer 5 minutes.

    Remove from heat. Stir in sour cream and squeeze of lime juice until creamy.

    Taste and adjust with salt, pepper, and more lime. Serve hot with tortillas or rice.
