Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1.5 cups corn (fresh, frozen, or canned, drained)
  • 1 medium red bell pepper, diced
  • ⅓ cup red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 whole lime (juiced) plus olive oil and salt to taste

Instructions
