Ingredients

  • 1 lb ground pork
  • 4 slices bacon
  • 1 medium onion
  • 2 cloves garlic
  • ½ cup heavy cream
  • 1 large egg
  • ½ loaf baguette
  • 1 tbsp fresh thyme

Instructions

  1. 1

Preheat oven to 350°F. Finely chop the 1 medium onion and 2 garlic cloves. Cut the 4 bacon slices into small pieces.

  2. 2

In a skillet over medium heat, cook the bacon until crisp, about 5 minutes. Add the onion and garlic, cook until soft, about 3 minutes. Let cool slightly.

  3. 3

In a large bowl, combine the 1 lb ground pork, cooked bacon mixture, 0.5 cup heavy cream, 1 egg, and 1 tbsp fresh thyme. Mix until just combined; season with salt and pepper.

  4. 4

Transfer the mixture to a small loaf pan and smooth the top. Bake until the pâté is set and reaches 160°F, about 40 minutes. Let rest for 10 minutes.

  5. 5

While the pâté rests, slice the 0.5 baguette into 1/2-inch rounds and toast until golden, about 5 minutes.

  6. 6

Slice the pâté and serve warm with the croutons, garnished with extra thyme if desired.
