Ingredients

  • ¼ pound country ham, thinly sliced
  • 4 whole eggs
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper

    Place a 10-inch skillet over medium-high heat and wait 1 minute until the bottom feels hot when you hold your hand 2 inches above it.

    Lay the ham slices flat in the hot skillet in a single layer, slightly overlapping if needed.

    Cook the ham for 2 minutes until the edges begin to curl and the surface turns light golden brown.

    Flip each ham slice over with tongs and cook for 1 minute more until the second side is light golden.

    Push the ham to the outer edge of the skillet and lower the heat to medium.

    Add the butter to the empty center of the skillet and swirl it around with a spoon for 20 seconds until it melts and smells nutty.

    Crack the 4 eggs one at a time directly into the melted butter, spacing them evenly around the skillet.

    Sprinkle the salt and pepper evenly over the eggs, then cover the skillet with a lid or large plate.

    Cook covered for 3 to 4 minutes until the whites turn opaque and solid but the yolks still jiggle slightly when you gently shake the pan.

    Slide the ham and eggs onto a plate, arranging the ham around the eggs.
