Costilla Tacos with Lime Crema

Ingredients

  • 2.5 lb pork ribs (costillas), cut into 3-inch segments
  • 1 whole white onion, halved
  • 6 whole garlic cloves, smashed
  • 3 whole dried chilhuacle or guajillo chiles, stemmed
  • ½ cup sour cream
  • 1 whole lime (juiced)
  • 12 whole warm corn tortillas (6-inch)
  • ¼ cup fresh cilantro, chopped

Instructions

    Place ribs, onion, garlic, and chiles in a heavy pot with 2 cups water. Bring to boil.

    Reduce heat to low, cover, and simmer until ribs are fall-apart tender, 35–40 minutes.

    Remove ribs and let cool slightly. Shred meat from bones; discard bones.

    Stir sour cream and lime juice together in a small bowl until smooth.

    Warm tortillas in a dry skillet 30 seconds per side until pliable.

    Fill each tortilla with shredded pork. Drizzle with lime crema and top with cilantro.

    Serve immediately with lime wedges and extra crema on the side.
