Ingredients
- 2.5 lb pork ribs (costillas), cut into 3-inch segments
- 1 whole white onion, halved
- 6 whole garlic cloves, smashed
- 3 whole dried chilhuacle or guajillo chiles, stemmed
- ½ cup sour cream
- 1 whole lime (juiced)
- 12 whole warm corn tortillas (6-inch)
- ¼ cup fresh cilantro, chopped

Place ribs, onion, garlic, and chiles in a heavy pot with 2 cups water. Bring to boil.

Reduce heat to low, cover, and simmer until ribs are fall-apart tender, 35–40 minutes.

Remove ribs and let cool slightly. Shred meat from bones; discard bones.

Stir sour cream and lime juice together in a small bowl until smooth.

Warm tortillas in a dry skillet 30 seconds per side until pliable.

Fill each tortilla with shredded pork. Drizzle with lime crema and top with cilantro.
