Ingredients
- 3 lbs pork ribs (costillas), about 3 lbs bone-in
- 1 whole orange, juiced
- 2 whole lime, juiced
- 4 cloves garlic cloves, minced
- 1.5 tsp cumin
- 3 tbsp olive oil
- 1 whole white onion, divided (for cooking + serving)
- 8 count corn or flour tortillas, warm

Pat pork ribs dry. Season both sides generously with salt and black pepper.

Whisk orange juice, lime juice, minced garlic, cumin, and olive oil in a bowl.

Peel and halve one onion; add to the marinade along with pork ribs.

Heat a large pot over medium-high until oil shimmers. Sear ribs 2 minutes per side until edges brown.

Pour marinade over ribs, scraping up browned bits. Cover, reduce heat to low, and simmer 35 minutes.

Uncover and increase heat to medium-high for 3 minutes until sauce reduces and coats the pork.

Shred pork directly in the pot using two forks, stirring to combine with sauce.

Dice remaining raw onion. Warm tortillas over a gas flame or in a dry skillet, ~30 seconds per side.

Fill each tortilla with shredded pork and top with diced onion. Serve with lime wedges.
