Ingredients

  • 1.5 lbs cooked chicken, boneless and skinless
  • ¾ cup mayonnaise
  • ¼ cup apricot preserves or jam
  • 1 tablespoon curry powder
  • 1 tablespoon lemon juice
  • 1 pinch salt and pepper to taste

    Cut the cooked chicken into bite-sized pieces about the size of a sugar cube, removing any remaining bones or skin as you work.

    Pour the mayonnaise into a large mixing bowl, then add the apricot preserves by spoonfuls on top—do not stir yet.

    Sprinkle the curry powder evenly over the apricot and mayo mixture, then pour in the lemon juice.

    Whisk everything together with a fork or whisk until the sauce is smooth, pale yellow, and uniform with no visible streaks—about 30 seconds.

    Taste the sauce, then add a small pinch of salt and a grind of fresh pepper; whisk again and taste once more, adjusting as needed.

    Add all the chicken pieces to the bowl with the sauce, then fold everything together using a rubber spatula, rotating the bowl a quarter turn with each fold, until all chicken is coated and no white sauce remains visible.

    Divide the coronation chicken evenly among serving plates or a serving platter, spooning extra sauce over the top of each portion.
