- 1 tablespoon lemon juice
- 1 pinch salt and pepper to taste

Pour the mayonnaise into a large mixing bowl, then add the apricot preserves by spoonfuls on top—do not stir yet.

Sprinkle the curry powder evenly over the apricot and mayo mixture, then pour in the lemon juice.

Whisk everything together with a fork or whisk until the sauce is smooth, pale yellow, and uniform with no visible streaks—about 30 seconds.
