Ingredients
- ½ lb ground beef (80/20)
- 2 slices American cheese slices
- 2 buns potato buns (or soft burger buns)
- ¼ medium onion, thinly sliced yellow onion
- ¼ cup water
- 1 tbsp butter

Divide ground beef into two thin patties, roughly 1/4-inch thick and 4 inches wide. Season generously with salt and pepper.

Heat a 10-inch skillet over medium-high. Add the patties and sear until lightly browned, about 60 seconds per side. Do not move them.

Top each patty with a slice of cheese. Scatter the sliced onion over and around the burgers, then pour water into the pan's bottom.

Cover the skillet tightly. Steam for 4 minutes on medium heat until cheese melts and onions soften.

Butter the buns and place them cut-side down in the skillet for 30 seconds to toast lightly.

Slide each burger onto a bun, add a spoonful of steamed onions on top, and serve immediately.
