Connecticut-Style Lobster Roll

Ingredients

  • 1 lb lobster meat, cooked and chilled
  • 3 tbsp butter
  • 2 tbsp mayonnaise
  • ½ whole lemon
  • 2 whole split-top hot dog buns
  • 1 to taste salt and pepper

Instructions

    Chop lobster meat into bite-sized pieces. Discard any shell fragments.

    Combine lobster, mayo, and a squeeze of lemon juice in a bowl. Season with salt and pepper.

    Heat 1.5 tbsp butter in a skillet over medium. Add buns cut-side down and toast until golden, ~2 minutes.

    Transfer toasted buns to a plate. Warm remaining 1.5 tbsp butter in the pan off heat for 30 seconds.

    Spoon lobster mixture into toasted buns. Drizzle warm butter over top.

    Serve immediately with a lemon wedge on the side.
