Ingredients
- ½ cup quinoa
- 1 can (15 oz) black beans
- 1 avocado
- 1 cucumber
- 1 tomato
- 1 red bell pepper
- 1 cup tortilla chips
- 3 tbsp olive oil

Rinse the 0.5 cup quinoa in a fine mesh strainer. In a small pot, combine quinoa with 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer until water is absorbed and quinoa is fluffy, about 15 minutes.

While quinoa cooks, drain and rinse the can of black beans. Dice the avocado, cucumber, tomato, and red bell pepper into bite-sized pieces.

In a small bowl, whisk together the 3 tbsp olive oil with 1 tbsp lemon juice (or vinegar), salt, and pepper to make a simple dressing.

Once quinoa is done, let it cool slightly. In a large bowl, combine the cooked quinoa, black beans, diced vegetables, and avocado.

Pour the dressing over the salad and toss gently to coat. Taste and adjust seasoning with more salt or pepper if needed.

Just before serving, crush the 1 cup tortilla chips slightly and sprinkle over the top for crunch. Serve immediately.
