Ingredients
- 2 cups jasmine rice
- 3 cups water
- 1 tbsp dried butterfly pea flowers
- 1 tsp turmeric powder
- 1 cup red cabbage
- ½ tsp salt
- 1 tbsp coconut oil

Rinse the 2 cups jasmine rice in cold water until the water runs clear. Drain well and set aside.

Divide the 3 cups water into three bowls. Steep 1 tbsp butterfly pea flowers in one bowl for 10 minutes until deep blue. In another, stir in 1 tsp turmeric until yellow. In the third, add 1 cup chopped red cabbage and let sit for 10 minutes, then strain to get purple water.

Heat 1 tbsp coconut oil in a large pot over medium heat. Add the rice and stir for 2 minutes until lightly toasted and fragrant.

Pour in the blue water, yellow water, and purple water (about 1 cup each) along with 0.5 tsp salt. Stir gently to distribute the colors, but do not overmix.

Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the liquid is absorbed and the rice is tender.

Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork to reveal the colorful layers. Serve warm.
