Ingredients
- 2 cups pre-cooked cornmeal (masa harina)
- 1.75 cups warm water
- 1 tsp salt
- 2 tbsp butter
- 1 cup fresh mozzarella or queso fresco, shredded

In a large bowl, combine masa harina and salt. Slowly add warm water while mixing with your hands until a soft, pliable dough forms. It should feel like Play-Doh, not sticky.

Let the dough rest for 5 minutes to absorb the water.

Warm a large non-stick skillet or griddle over medium-high heat. Add 1 tbsp butter.

Divide dough into 8 equal portions. Wet your hands lightly and shape each portion into a ball, then flatten into a 3-inch disc about 0.5 inches thick.

Working in batches, cook arepas for 4-5 minutes per side until golden brown and lightly crispy on the outside.

While still hot, carefully cut arepas horizontally with a sharp knife to create a pocket, then stuff with shredded cheese. The heat will melt it.
