Ingredients

  • 8 oz somen noodles
  • 1 cup dashi or vegetable broth
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 whole cucumber
  • 2 whole green onions
  • 2 whole eggs
  • ½ tsp wasabi (optional)

Instructions

    Bring a pot of salted water to a boil. Place eggs in cold water in a separate pot.

    Slice cucumber lengthwise into thin matchsticks. Slice green onions into 2-inch lengths.

    In a small bowl, whisk together dashi, soy sauce, and mirin. Refrigerate.

    Bring eggs to a boil, then remove from heat. Cover and rest 6 minutes for soft-boiled.

    Add somen to boiling water. Stir and cook until al dente, about 2 minutes.

    Drain noodles into a colander. Rinse under cold running water until cool and separated.

    Peel eggs under cold water. Cut each in half lengthwise.

    Divide cold noodles between two bowls. Top with cucumber, green onion, and egg halves.

    Pour dipping sauce into small bowls. Add wasabi if desired. Serve immediately.
