Cod with Clams in Lemon Butter Sauce

Ingredients
- 1.5 lb cod fillets
- 1 lb clams
- 3 tbsp butter
- 1 lemon
- ½ tsp salt
- ¼ tsp black pepper

Pat the 1.5 lb cod fillets dry and season both sides with the 0.5 tsp salt and 0.25 tsp black pepper. Set aside.

In a large skillet over medium-high heat, melt 2 tbsp of the 3 tbsp butter. Add the 1 lb clams and the juice of the 1 lemon, cover, and cook until the clams open, about 5-7 minutes. Discard any that stay closed.

Push the clams to one side of the skillet. Add the remaining 1 tbsp butter and the seasoned cod fillets. Cook the cod for 3-4 minutes per side, until it flakes easily with a fork and is opaque throughout.

Spoon the lemony butter sauce from the skillet over the cod and clams. Serve immediately, with extra lemon wedges if you like.

For extra flavor, stir in a minced garlic clove or a pinch of red pepper flakes with the butter in step 3.
