Ingredients

  • 1.5 cups graham cracker crumbs
  • 4 tbsp butter, melted
  • 1.5 cups sweetened shredded coconut
  • 8 oz cream cheese, softened
  • 1 whole lime (zested + juiced)
  • ½ cup powdered sugar

Instructions

    Mix graham cracker crumbs with melted butter, then press firmly into an 8×8 baking dish to form the base.

    Toast coconut in a dry skillet over medium heat, stirring often, until edges turn golden, about 4 minutes.

    Blend cream cheese, powdered sugar, lime zest, and 2 tbsp lime juice until smooth and fluffy, 2 minutes.
