Ingredients

  • ½ cup rolled oats
  • ¾ cup coconut milk (full-fat canned)
  • 2 tbsp chia seeds
  • ½ cup strawberries, sliced
  • ¼ cup pomegranate seeds
  • ¼ cup sliced almonds

Instructions

    Stir oats, coconut milk, and chia seeds in a mason jar or container until well combined.

    Cover and refrigerate overnight, or at least 4 hours, until the mixture thickens to pudding consistency.

    Stir the oats and add a splash of coconut milk if too thick, then divide between two bowls.

    Top each bowl with sliced strawberries, pomegranate seeds, and almonds.

    Serve cold or heat gently in the microwave for 90 seconds if you prefer it warm.
