Ingredients

  • 4 whole eggs, separated
  • 1 tbsp butter
  • 1 pinch salt and pepper to taste
  • 1 tbsp fresh chives or parsley, chopped
  • 2 slices crispy bacon or prosciutto, crumbled
  • 1 tbsp cream or whole milk

Instructions

    Preheat oven to 375°F. Separate eggs, placing whites in a clean bowl and yolks in a small ramekin.

    Add cream to the egg yolks and whisk with a fork until combined. Season with a pinch of salt and pepper.

    Using an electric mixer or whisk, beat egg whites until stiff peaks form, ~3 minutes.

    Divide whites between two buttered oven-safe ramekins or small bowls, creating a nest with a well in the center.

    Slide ramekins into oven and bake until clouds are puffed and set but still pale, 5–6 minutes.

    Carefully remove ramekins from oven and pour one yolk mixture into the center well of each cloud.

    Return to oven for 1–2 minutes until yolks look cooked on the surface but still jiggle slightly.

    Top with crumbled bacon and fresh chives. Serve immediately while the cloud is still puffed and warm.
