Ingredients

  • 2 cups all-purpose flour
  • 6 tbsp butter, cold and cubed
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • ¾ cup heavy cream
  • ½ cup clotted cream
  • ¾ cup strawberry jam and orange marmalade (combined, divided)
  • 2 medium apples (Granny Smith or Honeycrisp), sliced thin

Instructions

  1. 1

Preheat oven to 400°F. Mix flour, sugar, baking powder, and a pinch of salt in a bowl.

  2. 2

Cut cold butter into the flour mixture with your fingertips until it looks like breadcrumbs.

  3. 3

Pour in heavy cream and stir with a fork until a shaggy dough forms; don't overmix.

  4. 4

Drop 8 golf-ball-sized portions onto a parchment-lined baking sheet, spacing 2 inches apart.

  5. 5

Bake until golden brown on top, 12–14 minutes. Scones should look dry and feel light.

  6. 6

Serve warm scones split in half, topped with clotted cream, jam, marmalade, and sliced apples.
