Ingredients

  • 1 lb raclette cheese, sliced into 3-inch squares
  • 1.5 lbs waxy potatoes (fingerling or baby gold)
  • 1 loaf crusty bread (baguette or country loaf)
  • ½ cup pickled cornichons or small pickles
  • 1 tsp salt
  • ¼ tsp black pepper

Instructions

  1. 1

Cut potatoes into 2-inch chunks. Place in a large pot and cover with cold salted water.

  2. 2

Bring to a boil and cook uncovered until potatoes are fork-tender, 12–15 minutes.

  3. 3

Slice bread into 0.5-inch-thick pieces. Arrange on a cutting board or in a bread basket.

  4. 4

Drain potatoes and transfer to a serving bowl. Season with salt and pepper.

  5. 5

Place raclette cheese slices in a raclette grill, skillet, or broiler pan and heat until melted and bubbly, 3–4 minutes.

  6. 6

Scrape melted cheese directly onto a slice of bread using a raclette spatula or butter knife.

  7. 7

Serve with warm potatoes, pickles, and fresh bread. Repeat until cheese is gone.
