Ingredients
- 2 cups heavy cream
- ½ cup whole milk
- ⅓ cup granulated sugar
- 1 tsp vanilla extract
- 2 tsp unflavored gelatin
- 3 tbsp water
- 1.5 cups fresh mixed berries
- 2 tbsp granulated sugar
- 1 tbsp lemon juice

Pour water into a small bowl and sprinkle gelatin over it. Let sit for 5 minutes to bloom.

Combine berries, 2 tbsp sugar, and lemon juice in a small saucepan. Gently heat over medium for 3 minutes, stirring occasionally. Set aside to cool.

Pour heavy cream and milk into a saucepan. Add 0.33 cup sugar and heat over medium, stirring occasionally, until steaming (do not boil).

Remove from heat and stir in bloomed gelatin until completely dissolved. Add vanilla extract and stir well.

Strain mixture through a fine-mesh sieve into a pouring bowl to remove any lumps.

Divide custard mixture evenly among 4 serving ramekins or glasses.
