Classic Niçoise Salad

Ingredients
- 12 oz potatoes, waxy (fingerling or baby gold)
- 6 oz green beans, fresh
- 2 large eggs
- 1 can (5 oz) canned tuna in water
- 4 cups mixed greens (lettuce, arugula)
- 1 lemon + 3 tbsp oil lemon (juiced) and extra virgin olive oil
- 1 to taste salt and black pepper

Boil potatoes in salted water until tender, about 12 minutes. Drain and let cool slightly.

Boil green beans in the same pot until bright green and just tender, 5 minutes. Drain.

Boil eggs in the same pot for 8 minutes. Transfer to ice water, cool, then peel and halve.

Arrange mixed greens on a serving plate. Top with cooled potatoes, green beans, and eggs.

Drain tuna and flake it over the salad in a loose cluster.

Whisk lemon juice with olive oil, salt, and pepper. Drizzle over the salad.
